Overnight Oats

Convenience might be one of the top reasons we tend to gravitate towards processed foods.  These days, it sometimes seems challenging to find any time to add tasks to our already full “plates”.  In reality, after the initial learning curve, preparation time is actually minimal.  Especially when compared with the benefits.

I eat eggs 95% of the time for breakfast.  While I can’t pretend to love them, they are very versatile, so I don’t typically get bored.  I saw this recipe and modified it with what I had in the kitchen.  At first bite, I was convinced this must be high in calories, so I put the ingredients into www.livestrong.com.  The results, a balanced, healthy, low calorie, high flavor, breakfast.  Next time, I’m going to add vegan protein powder to increase protein and exclude the Agave Nectar to reduce sugar.  Because I used sweetened almond milk and fresh fruit it was sweet enough.

  • 1/3 c Fage 2% Greek Yogurt
  • ¼ c  Organic Old Fashioned Thick Cut Oatmeal (or any old fashioned rolled oat)
  • 1/3 c Almond Milk (or any milk preference)
  • 1.5 tsp Organic Dried Chia Seed
  • 1 Tbs Organic Raw Agave Nectar
  1. Add all ingredients to a mason jar or other sealable container.
  2. Shake to mix ingredients.
  3. Mix in fresh fruit of choice.  Strawberries, Bananas, Blueberries, Mango.  Pick something that is in season and locally grown!
  4. Place the lid on the container and let sit in the fridge overnight.  Should be good for up to two days.

Why Is It Good?

  • Blueberries:  Antioxidant, Antibacterial, Antiviral.  These little berries kill bacteria and viruses.
  • Strawberries: Anticancer, Antioxidant, Antiviral.  Considered a mild tonic for the liver, these are a great source of potassium and vitamin A.
  • Chia Seed:  Food medication.  These seeds are great for you for so many reasons, including helping lower cholesterol, good for weight loss, they actually expand giving you the “full feeling” and providing reserved energy. Click here to read more about these beneficial seeds.
