Cauliflower Crust Pizza

Who doesn’t like pizza?  But what about a pizza you don’t have to feel even a little guilty about eating?  I saw this and had to try it.  I modified based off what I had in the kitchen.  The result, easy, delicious, and worth it.

Organic Veggie Pizza with Cauliflower Crust

Ingredients:

  • Organic Cauliflower
  • 1 Soy-Free Egg
  • 1/4 cup shredded cheese
  • Sea Salt and Pepper
  • Garlic Clove
  • Organic Veggies (and or toppings of choice)

Crust

  1. Pre-heat ove 450 degrees
  2. Pulse the cauliflower in a food processor or chopper.  Be sure to not over process.
  3. Put cauliflower in the microwave for about 8 minutes.
  4. Beat the egg.
  5. Mix the egg,  shredded cheese, and 1 cup of the cauliflower.
  6. Sprinkle with sea salt, pepper, and garlic (I prefer fresh garlic).  Mix.
  7. Spray non-stick of choice onto cookie sheet.
  8. Pour the mixture onto a cookie sheet and spread it out evenly.
  9. Cook for about 15 minutes

While the crust is cooking, I sliced up some fresh organic veggies for a toping.  It’s a pizza, top it how you like, but this was delicious and I recommend giving it a try. Since there was already cheese in the crust, I kept it off the top.

  • 1 small zucchini
  • 1 shitake mushroom
  • 1 tomato
  • 1 serrano pepper

Add toppings to the pizza.  I drizzled the top with a bit of olive oil . Put the pizza back in the oven for 3-4 minutes.  Sprinkle with chives and serve. Pay attention to how good you feel having just finished eating whole foods.  No preservatives, no additives, nothing you can’t pronounce.  Enjoy!

Leftovers?  Add them to your egg white scramble in the morning for a healthy breakfast!
